Quinoa can be used in tons of different recipes. I tried a lot of them, some great, some not so great. I'd like to share a few of my favorites! First, cheesy quinoa cauliflower. This is a great side dish, or even a main dish!
The typical way to cook quinoa is to rinse, put it in water, let it boil, and then turn it down to a simmer for about 15 minutes until the water is absorbed. In this recipe, chicken broth is used in place of the water.
Ingredients:
1 cup uncooked quinoa
1 3/4 cups chicken broth
2 cups chopped cauliflower
1 cup shredded cheddar cheese
Rinse quinoa. Put the quinoa and chicken broth over high heat until it boils. Bring it down to a medium heat simmer and add cauliflower. Cover the pot and leave it for 15-20 minutes until all of the chicken broth is absorbed by the quinoa. Mix in the cheese and any extra flavoring you would like to add.
You can use simply salt and pepper or try something else. I used a garlic and cheese dry dip mix that I had, I've also heard Hidden Valley Ranch dry mix is good.
This is easy to cook up and will keep in the refrigerator- it reheats very well!
