Quick Update!

So, I'm a month into summer and I love being home! I'm able to cook some meals, try new foods, and be more consistent with running. 

I wanted to give you guys a quick update to show you some things I've been trying and let you know what I plan to post this summer. 


Shortly after coming home, my mom and I went shopping to stock our house with good foods! We went to the local grocery store and then took a trip to Trader Joe's to get some other foods that were cheaper to find there Like the protein, quinoa, coconut oil, chia seeds, and barley. More on these in future posts. :)


This. Is. Quinoa. Have you heard of it? They tell me it's pronounced "keen-wa." Lately it's been considered a  superfood, containing all of the amino acids that your body needs, but does not make itself. It is also high in fiber, magnesium, calcium, and other great nutrients. I thought it was worth a try!

 To make quinoa, you rinse it out and cook it until the water is soaked up. It's a lot like rice and is usually used as a rice or oatmeal substitute.
Here's my try at quinoa oatmeal!
Quinoa can be made in so many different recipes. I made apple cinnamon quinoa muffins, chicken quinoa quesedillas, cheesy quinoa cauliflower, and quinoa macaroons! Each recipe was so different. I plan on posting the recipes to the ones that turned out well!

I've made a smoothie nearly every day since coming home! I love them. I just throw different ingredients together and tweak it until I think it tastes good. :)

Strawberry Banana Protein Shake
Frozen Strawberries
1 Banana
Vanilla Almond Milk (or low-fat milk)
1 ScoopVanilla Protein Powder
1 T Chia Seeds


 Since coming home and not having a gym membership yet, I've been doing lots of running! My boyfriend got me new Nike Free's for my birthday, and they've been amazing! They're insanely light and my foot pain since starting to run with them has decreased almost entirely. I love them!














I just got a summer internship, and I've enjoyed shopping for "work clothes!" It's been different and exciting shopping for a new wardrobe, but it's a fun task. ;)

This summer I'm hoping to post updates on my workouts, new recipes, and share protein smoothie ideas. 
I'm planning on posting shorter entries more often so that I don't have so much information to post all at once! Please give me any feedback for what you'd like to see this summer!

    1. I actually just get them at my local grocery store - Cub Foods. I believe most grocers carry a small selection of tofu :)
